This winter, don’t get down in the root vegetable doldrums.  There are so many wonderful things you can do with seasonal winter produce that are not only nutrient rich, but delicious too.  The trick to all-year exciting eating is avoiding getting stuck in old habits.  Don’t buy the same things all the time.  Be bold: pick up a vegetable you normally pass over.  Leeks, jeruslam artichokes, tatsoi, fennel.

mmm Fennel.  It’s incredible that a bulb with frilly green stalks can taste like a candy children despise and all sensible adults grow to appreciate.  Yes, it’s licorice flavored, as well as being an excellent source of fiber, phytonutriets, and antioxidants.  It has anti-inflammatory properties, is a digestive aid, and the seeds can even freshen your breath.  Maybe you’ve seen them in an Indian restaurant.  A tiny spoonful is so refreshing after a rich meal.
